Recipe for Traditional Bahraini Machboos

Machboos is a dish that’s as enjoyable to prepare as it is to eat. Here’s a simple recipe you can follow to make your own version of this Bahraini classic at home.

Ingredients:

  • 2 cups basmati rice
  • 500g chicken or lamb, cut into pieces
  • 2 large onions, finely chopped
  • 3 cloves garlic, minced
  • 4 ripe tomatoes, chopped
  • 1 tablespoon turmeric powder
  • 1 teaspoon coriander seeds
  • 2 dried black limes (loomi)
  • A pinch of cinnamon and cardamom
  • Salt and pepper to taste
  • Vegetable oil for cooking

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak it in warm water for about half an hour then drain.
  2. Heat some vegetable oil in a large pot over medium heat. Add the onions and garlic and sauté until they turn golden brown.
  3. Add the meat to the pot and brown on all sides.
  4. Stir in the tomatoes along with turmeric, coriander seeds, cinnamon, cardamom, salt, and pepper. Cook until the tomatoes break down into a sauce.
  5. Add the drained rice to the pot and stir well so that each grain is coated with the sauce.
  6. Pour enough water or broth into the pot to cover the rice by about an inch.
  7. Pierce each dried lime several times with a knife or fork and add them to the pot.
  8. Cover and simmer on low heat until all liquid has been absorbed by rice and it’s fully cooked—usually around 20 minutes.
  9. Let it rest for few minutes before fluffing up with a fork prior serving.
